The EVE Launcher, from what I can tell, represent your EVE clients. Wine doesn't show up as a CPU command (Window server does), and so the more eve clients you are running the more CPU the launcher will show using.

I have a 2012 iMac. 8GB of ram and 512mb GPU. i run EVE under Sierra and have had no know major issues. I wish I could tell you it will be a golden goose to upgrade OS, but that would be a wishful thought. As software will be software and do weir...
